Courage Asia, in collaboration with the Philippine Young Chefs Club (PYCC) and Tourism Industry Board Foundation, Inc (TIBFI), with the special participation of Prime Pacific Foods Corp, Breville, and Nacionale Bladeworks presents the 11th edition of The Top Menu Masters Foodservice Conference, with the theme “The Future of Food”, Year 3, on March 20, 2020, at the Conrad Hotel, Mall of Asia, Pasay City.

It highlights food and beverage trends on sustainability that are shaping the F&B and hospitality industry. Featuring F&B thought leaders, top culinarians and chefs, restaurant top operators, practitioners and restaurant owners, beverage experts, and operations professionals, the conference gathers the stakeholders of this industry, including the public sector, the academic sector, the food and non-food suppliers, the service providers and the media practitioners.

For the past decade, sustainability is an annual concern for the stakeholders of the food industry. The convergence of planet survival, people’s welfare and responsibility and profit objectives prompt the various sectors to constantly seek answers to issues surrounding to sustainability, such as climate change, agricultural produce, food waste, packaging materials, to name a few. The Future of Food, for the past 3 years, talks about food trends, industry best practices, and action plans to move this issue forward and resolve the nagging questions. In November 2017, the first conference was held at the UP Campus in BGC. In March 2019, the second edition was held at the EDSA Shangri-la Hotel. Both conferences attracted a delegation that’s eager and extremely interested to know how sustainability can be applied to benefit the consumers of today.

Leading the speakers lineup is Secretary Manny De Guzman, Vice Chairperson for Climate Change Commission, as Keynote Speaker to tackle climate change and its impace on sustainability. Sharing their insights on the today’s market and the sustainability global trends are Kantar Philippines CEO Gary De Ocampo, 8Ronin CEO Kaz Endo from Guam, Global business advisor Dan Neufeld from Canada, XEX1 Principal Consultant Nik Metaxa-Schwarten from Germany, ASEAN Green Monday Business Development Director Kelvin Ng from Singapore and Food trader and entrepreneur Thomas Furrer from Switzerland.

Practical applications and best practices will be shared by Pamilyang Filipino Farmers Agricultural Cooperative Chairperson Gigi Morris from Cebu, Marco Polo Davao former F&B director and consultant Chel Yabut-Galang, City of Dreams Vice President for Hotels and F&B, SM Malls VP for Strategy Gino Borromeo, The Fatted Calf Executive Chef Jayjay, Sycip from Silang Cavite, F&B Consultant Chef Sheilla Lopez, and CCA Manila Program Culinary Director Chef Philip Golding from UK.

THE 3RD edition of The Future of Food is hosted and moderated by Alu Aran, and will be panel moderated by metrostyle.com editor Nana Ozaeta and ANCX writer Marilen Fontanila.
