The Sunny Side Cafe has been shining the bright and sunny spotlight on all things breakfast and comfort food in Boracay, soothing morning hangovers of the island’s party people and fueling the hungry with delicious all-day comfort dishes paired with excellent coffee. The cafe serves the fluffiest giant pancakes in the island and it’s the place where you can have perhaps the best interpretation of the Filipino champorado in Boracay, too. There’s a lot to try from sandwiches, pancakes, and rice meals, but if you want to be feeling fancy with your breakfast, then you must spoil yourself with their Foie Gras Toast.
You know it’s no basic toast when you’re ordering this beauty — slices of pan-seared foie gras are plump and chunky, giving you your money’s worth. Velvety, rich, and fatty, the nuggets are laid on top of a fluffy house-made brioche (all breads in this restaurant are made in-house). The delicately crisp and buttery bread is smeared with sweet hibiscus jam, the sweet spread paired well with the full flavor of the liver. The sprinkle of pumpkin seeds gives each melt in your mouth bite of the foie gras a crunch, while edible flowers and microgreens lend some freshness. It may seem that a lot is going on in this photogenic and prettily stacked luxe toast, but each bite manages to remain well-rounded, while giving the slices of foie gras the top billing it so deserves.
