Foie gras parfait with macerated berries, salted caramel, toasted oats, red wine gelée on a raisin baguette; Lobster bisque with coconut foam, kaffir lime and lobster bruschetta; Herb-crusted scallops with pumpkin gnocchi, cranberry, chanterelle and Champagne nage; Slow-roasted Wagyu beef tenderloin with celeriac purée, poached asparagus, ratte potato and truffle butter; and “Passion” (Araguani 72% chocolate and maracuja feuillantine) are among the stars of his menu. Paired with a glass of Champagne or artfully selected wines, this is one Valentine’s dinner that is not to be missed. P4,600 per person with a glass of Champagne.
