In a corner of the biggest mall in Southeast Asia is a new restaurant concept of Managing Partner Gia Suarez. Located on the 2nd level, Azul restaurant boasts a menu of authentic Filipino and Spanish Fusion dishes. From Cocido to Pochero Cebuano, Bacalao to Beef Caldereta, Azul offers culinary delights from both the Basque & Oriental cultures.

An intriguing blend over a more purist direction; one wonders what influenced Gia Suarez and on a more candid note why Azul and not something like Bughaw? She answers, “We wanted a name that would have a reference to being by the water, while at the same time giving a hint of the Spanish touches in our menu.”

It was this vision of a cultural fusion between Spain and the archipelago we call home that shaped Azul’s final form; an establishment that tells a story through its name. Azul, derived from the Spanish language, speaks its tongue through its food. Whether it’s the story of the Andalusians or of the Moors, La Espana is present through and through, abound with native shades and compliments. Paella Pinoy, for example recreates the viejo favorito by adding uniquely Filipino elements such as pork, longanisa, tuyo and danggit

Azul concocts original dishes and drinks not found in other restaurants like the Eggplant and Mango Salad, Azul Beef Ribs, Paella Sisig and several versions of Gambas. Their specialty drinks include the lychee strawberry, pineapple mocktail, apple mojito mint and absolute ecstacy.

What’s left of that perfect paella and the exquisite cocktail is lying on the table, naked to the world, savored by you. Hemingway would not have had it any other way. This is a world painted in the color of AZUL.
