Eat of the Week: This Spicy Vegan Ramen, a Meatless Fix to Your Rainy Day Food Cravings

Ramen weather shouldn't leave out the vegans and vegetarians out in the cold. When that craving for a hot bowl of noodle soup takes over, head to Susi in BGC for their healthy, meat-free take on spicy ramen!

It's goodbye to bright and sunshiney summer, and hello to the rainy season. And when we talk about cooler cuddle weather, a bowl of piping-hot noodle soup is always the comforting choice on top of everyone's must-eat list. But when we talk about ramen, it's always usually about that hearty pork bone or chicken broth and along with it, the traditional toppings of chashu and egg. For someone cutting down on meat or is strictly vegetarian or vegan, is there a ramen bowl out there you can enjoy? The answer is: yes.

Calling all vegans and vegetarians: this ramen is especially made for you.

If you're going meatless but craving for the noodle soup good for the soul, find your way to Forbestown in BGC and head to SUSI, the neighborhood's vegan restaurant. Here, everything they offer is absolutely meat-free, dairy-free, egg-free, and cruelty free. All food here is also made from scratch, including this Vegan Spicy Ramen.

Vegan Spicy Ramen

SUSI's Vegan Spicy Ramen gets its flavorful broth by combining a mushroom base with soymilk so you get a light and creamy soup, which is also slightly sweet and smokey. The noodles used here are eggless and gluten-free, too. And instead of the usual soft boiled egg and slices of braised pork, this ramen is topped with tofu cubes and shiitake mushrooms, and its medley of vegetables (carrots, bokchoy, nori) provide different kinds of textures with every slurp.

It's good to know that we're not limited to basic and boring salads in the metro when we want a more vegetable-driven and meatless diet whether it's because of the mood you're in, health reasons, or want to do your own little part in reducing carbon footprint. So for vegans and vegetarians who have been long starving for a soul-soothing bowl of ramen, you know where to go.
