Enderun Colleges with its global culinary partner École Ducasse from France will be having online classes starting October 2020. The École Ducasse Online Culinary eXperience by Enderun features easy-to-do recipes by the celebrated chefs of École Ducasse Manila.
We had a sneak peek of what the culinary experience will look like. For our session, we made some grissini a.k.a. breadsticks. I received a crate filled with everything we need — flour, salt, water, olive oil, dry yeast, and some herbs prior to our session. I was only told one thing: check out the module on the website. All you’ll really need is an oven and a set of new skills you’ve just conveniently learned.
A culinary kit will be delivered to you upon enrollment and will have access to the online module. After this, you can take the hands-on class at your own pace and attend the live session with the chef via Zoom.
The current recipes under the program include char siu pork bun, lamb tajine, Hainanese chicken, chicken fricassee, and crustaceans and salmon stew. Pastry recipes include Italian grissini, sourdough donuts, crepe suzette and creme brulee, New York cheesecake, Italian focaccia, and sacher torte.
