Hotel Okura Manila is set to open in the second quarter of 2021. It will be situated within the Philippines’ first integrated resort, Resorts World Manila, in Pasay City.
Embodying the elegant, refined Japanese hospitality with Filipino warmth, the luxury hotel will offer 190 spacious rooms and suites, and a variety of dining options. The Okura Hotels and Resorts group’s signature Japanese fine dining restaurant, Yamazato, is the first Japanese restaurant in Europe to earn a Michelin Star.
How did you select which items to include in the menu?
I carefully selected ingredients that are available and in stable supply. I contemplated the menu items’ composition with guaranteed high quality.
What challenges did you encounter in doing a delivery menu?
This is my first opportunity to work on a luxury delivery menu. We needed to source out the proper containers – the food must look beautiful and must secure the items safely during delivery. I added Yoshino Kuzu (arrowroot starch from the Yoshino area, Nara Prefecture) to thicken the sauces to ensure the consistency of the food upon delivery.
What is the best-seller item?
It is the Futomaki Inari Bento. We use Japanese rice called Koshihikari, as well as a specially blended sushi rice made from rice vinegar, sugar, and natural sea salt.
Which dish would you recommend to a first-time customer?
The Shiro Gohan Yukari Bento has several traditional authentic Japanese dishes like Yamazato’s signature tamago yaki and grilled sesame tofu.
