Now Open: Annam by NamNam Noodle Bar Singapore

Annam wants to make the best of Vietnam's comfort food and street food accessible and affordable for everyone — without compromising on flavors and the overall experience. Food here is rooted on traditional recipes but given a modern twist, and included in their pho-losophy is "no MSG," letting the ingredients' natural flavors make the dishes flavorful and robust. Director and Owner Chef Nam was in the restaurant during the July 6 grand opening, and shares that his take on his home country's food is modern while remaning homey and comforting, to cater to the palate of the customers.

 

Your Vietnamese fix in this new restaurant comes in comforting bowls of Hanoi phį»Ÿ,  crunchy banh mi sandwiches, and classic Vietnamese noodle dishes. These dishes are enhanced with more flavor with Annam's very own sauces and condiments, which they also sell inside the restaurant — there's hoisin sauce, chili sauce, and fish sauce to mix and blend in your food.

At Annam, they showcase pho from Hanoi, the birth place of the iconic Vietnamese noodle soup. At the restaurant, the broth gets its full flavor by bring boiled for over 24 hours, and is then added with rice flour noodles and garnished with freshly chopped herbs. The offer the pho in one size, which is actually good enough to share, and the variants available, six kinds, can come with the noodles of your choice–either traditional rice noodles, or "luxury" instant noodles, which Chef Nam recommends to try.

Various kind of toasted baguettes await banh mi fanatics — they are stuffed with different kinds of meats, chicken pate, mayonnaise, chilli peppers, pickled carrots and green papaya, cucumber, and fresh cilantro.

You can get your noodle fix here in other forms, such as classic Vietnamese noodle dishes hailing from Southern and Central Vietnam.
