Sticky Chicken Wings by Souv! by Cyma

Souv! is by Chef Robby Goco of Cyma Greek Taverna so you can expect the same Greek goodness in the new restaurant, but with modern twists and progressive interpretations of classics. Here, the five staple ingredients of Greek cooking always ground their food–that's salt, pepper, olive oil, oregano, and lemon–and all dishes at Souv! are made in-house and fresh, daily. One mezze that hit the homerun since its pre-opening and first few days of operations is their version of the all-time favorite chicken wings. Everybody loves some wings, and in the restaurant, you will be in for a treat with their version: the Sticky Chicken Wings (P495).

The chicken here is battered and crispy, and gets a sticky sweet finish with a coating of honey. The sweetness doesn't overpower everything though, as other elements come into play to balance things out: earthiness of oregano, zing of lemon, crisp and tangy pickled onions all bounce off of each other.

It comes with a dipping sauce of harissa yogurt, spice-ful and with enough garlic, to make every crunchy, sticky, and juicy bite of chicken even more flavorful. You can even have it as it is without the sauce. But the extra magic happens when you discover Souv's secret weapons: their proprietary salts, sourced and blended locally. There's a sea salt, and there's the spice-loaded one, my personal favorite (nay, adoration). I sigh and coo about it to the chef, trying to prod my way into getting its exact ingredients, but he just gives me a smile. It's a secret blend obviously. Smell it and it will remind you of plum powder or sweet and fruity kiamoy; have a taste and immediately your mouth is a burst of chili and lime. Sprinkle some on the chicken wings, and you get flavor bombs of happiness.
