Here are the recipes and procedures on how to recreate Chef Trisha Ocampoā€™s easy to follow festive dishes:

STRAWBERRY AND TARRAGON MOUSSE CROSTINI

Yield: 20 PCS

INGREDIENTS:
20pcs fresh strawberries, cut in half or quarters
1pcĀ baguette, sliced into Ā½ inch rounds
8Ā oz whole milk ricotta cheese
1/2 cup cream cheese, softened
2 tsp fresh tarragon, chopped
ZestĀ  of 2 lemons
1 tsp lemon juice
1 Tbsp sugar
1Ā  tsp kosher salt
1/2 tspĀ  black pepper
1-2 tbsp balsamic glaze

INSTRUCTIONS

1. Preheat your oven to 375ā„‰.
2. In a food processor, mix your ricotta, cream cheese, fresh tarragon, lemon zest and juice, salt, and pepper, until fully incorporated.Ā  NOTE: This can keep in the refrigerator for 7 days until ready to use.Ā 
3. For the crostini, slice your baguette Ā½ inch thick, sprinkle with salt and pepper, drizzle with olive oil, and bake for 8-10 minutes in the oven, until golden brown.Ā Ā 
4. To assemble:Ā  pipe the ricotta tarragon mousse on the baguette, followed by sliced strawberries, then drizzled with balsamic glaze.

CHICKEN PICATTA CREAM FETTUCCINIĀ 

Yield: 4 servings

INGREDIENTS
4 pcsĀ  boneless chicken breast fillet
salt and pepper to taste
Ā¼ cup all-purpose flour, for dredging
2Ā  TbspĀ  butter
2Ā  TbspĀ  olive oil
1/3 cupĀ  fresh lemon juice
1Ā  cupĀ  chicken stock/broth
1 cupĀ  heavy cream
1/4Ā  cupĀ  capers, rinsed
1/3Ā  cupĀ  parsley
500Ā  grams fettuccini noodles, cooked as per package instructionsĀ  parmesan cheese, shaved

PROCEDURE

1.Ā  Season chicken breast halves with salt and pepper. If chicken breasts are too thick, pound a little to Ā¼ inch thick.Ā  Dredge in seasoned flour on both sides and shake off excess.
2.Ā  In a large skillet over medium high heat, melt butter and olive oil.Ā  Add chicken and cook for about 2-3 minutes per side or until golden.Ā  Remove and set aside.
3.Ā  Turn the heat to medium low. Add broth, lemon juice, heavy cream, and capers. Bring the sauce to a boil and return to medium low heat. Season with salt and pepper as needed. Allow the sauce to cook and bubble for about 3 minutes.
4.Ā  Serve the chicken over cooked pasta and spoon the sauce over both. Sprinkle with fresh chopped parsley.

PORK TENDERLOIN ROAST WITH ROMESCO SAUCE

Yield: 6-8 servings

INGREDIENTS
250 gramsĀ red bell pepper, roasted, peeled, seeds and membranes removed
350Ā  grams tomatoes
4Ā  pcs large garlic cloves, peeled
Ā½Ā  cupĀ  roasted almonds
1 to 2Ā  tspĀ red pepper flakes
Ā¼ to Ā½ cupĀ  extra virgin olive oil, as needed
1Ā  TbspĀ  fresh Italian parsley, chopped
1Ā  tspĀ  paprikaĀ  salt and pepper, to taste
2Ā  TbspĀ  red wine
1 kg pork Tenderloin
salt and pepper, to taste
Ā¼ cup olive oil

PREPARATION

Preheat the broiler and line the baking tray with foil.
1. Place the tomatoes on the baking tray, and place under the broiler for two to four minutes, until charred on one side. Turn over and broil on the other side for another 2 to 4 minutes until charred. Remove from the heat, transfer to a bowl and allow to cool. Peel and core.
2. In a food processor, put in red peppers, tomatoes, garlic cloves, and roasted almonds.
3. Scrape down the sides of the bowl and add the olive oil in a slow steady stream.
4. Add 2 tablespoons of red wine, parsley, paprika, salt and pepper. Process until smooth, thick, and creamy. NOTE: If it is too thick add 1 or 2 tablespoons of red wine.Ā  If too thin, add olive oil, pulsing a few more times.
5. Taste and adjust seasoning, by adding salt or red pepper flakes as desired. Let the sauce stand for an hour at room temperature before using.
6. Meanwhile, generously season pork tenderloin with salt and pepper.Ā  Put in a roasting pan then line with aluminum foil.Ā  Brush with olive oil and put in a 350ā„‰ oven for 45 min to 1 hour.7. To serve, slice pork tenderloin to 1/8-1/4 inches thick.Ā  Arrange in a serving tray and pour Romesco sauce on top leaving some to serve on the side. Ā
