Showing up to a buffet feast without a plan of attack is a terrible idea. Here's your eat-all-you-can guide (including what you must not miss!) when you indulge in Hyatt Regency's The Café!

An interactive show-kitchen restaurant, The Café is Hyatt Regency at City of Dreams Manila's signature buffet restaurant. The lively 325-seat restaurant has experienced chefs performing live cooking and buffet stations with hot dishes prepared a la minute to ensure freshness. Choose from their seven sections — Italian, Grill and Griddle, Asian, Deli, Comfort Food and Favorites, and Pastry — each, showcasing different culinary production.

Start Strong With Appetizers:

The charcuterie section is a treat you shouldn't skip on at any buffets. On our visit, The Café had Salami Milano, Salami Filino, Olive Lyonere and Beef Pastrami. There are also breadsticks and a honey-infused lavoush which is a thin flat-bread you can enjoy the charcuterie with.

Looking to start with some Japanese? Head on over to the other side of the cold section and get a few slices of the fresh tuna, fresh snapper or seared tuna. There are also a number of unique and classic Japanese rolls you can choose from — Tempura maki, Spicy tuna maki, Vegan maki, Batera maki, and so much more.

Must Not Miss:

For carving, they boast of this ginormous (weighs 30-35kg) Snake River Farm Steamship Wagyu Beef, which they have daily and calls it "The Beast." Chefs will cut it straight from the huge chunk of meat and diners can ask them to sear it to get that crisp outer layer when you bite into it. The slice of beef already packs flavor as it is but they also have condiments — mushroom sauce, red pepper sauce, Dijon mustard, whole grain mustard, and horseradish cream — which you can douse it with.

Another can't-miss is the Truffle Oil Mac and Cheese which you'll find in the Italian Section. If you like the smell and taste of truffle and the classic mac and cheese, you would want to marry this dish, just like what we wanted to do. 

The Italian section also has a make-your-own-pasta station where you can choose from different kinds of pasta — spaghetti, penne, linguini, fettucini, fusilli — and sauces — bolognese, pesto, garlic cream, puttanesca — you can try. Make sure you wipe off the excess sauce with the freshly-baked foccacia bread!

The Café also has an excellent offering of savory dishes on their buffet spread. Although the offerings change from time to time, make sure you get a serving of their Sauteed French Beans with Caramelized Onions, Braised Red Wine Beef with Roasted Pumpkin, Grilled Mustard Cream Chicken with Mushrooms, and so much more.

Spread Highlight:

The seafood station is such a glorious sight. They have a spread of prawn, clams and mussels which diners can have cooked in different ways. What always surprises me and I can't help but indulge in is when buffet spreads would have Roasted Duck. Grab a few pieces and put some plum or hoisin sauce on.

Check out the Asian section for a steaming bowl of ramen or egg noodles from their Noodles station. Diners can also choose from the hot dishes — Kimchi Stew Bake Tofu and Meatballs, Crispy Baked Coconut Shrimp, Schezuan Sliced Beef in Chili Sauce, Chicken Chow Fan and so much more — they've freshly prepared.

We're all about loving our own, right? The Café's Filipino section has some hot items like Lechon Kawali, Pinakbet, Ginataang Manok, Kare Kareng Lamang Dagat, and so much more, that are perfect for balikbayans, foreign guests or if you just miss a good old lutong bahay (homecooked meal). They also serve popular Pinoy street food items like Tokneneng, Calamares, Cheese stick and Squid Ball.

Recommended Desserts:

Cap off your already indulgent meal with some decadent sweets from their Dessert Section. They have classic Filipino desserts like Halo-Halo and some kakanin — definitely a great treat if you're bringing a balikbayan to feast with you. They also have whole cakes like Red Velvet, Pecan Pie, Chocolate moist cake and Pandan Custard Cake. Don't miss out on their signature Jiggly Cake which you can top off with ice cream and drizzle with chocolate or caramel sauce!
