Chef Carlo Huerta's Marquesa de Chocolate, now available at Samba, Shangri-La at the Fort

This new dessert is part of Samba's new food lineup; the Peruvian poolside restaurant of Shangri-La at the Fort opened in October 2016, and since then has evolved its food offerings to continue to serve guests something different and exciting. At Samba, Chef Carlo Huerta lets palates travel to South America featuring fresh and bolder Peruvian specialties in their menu. The Marquesa de Chocolate is one of the 15 new dishes that are now available to try.

This chocolate dessert is a modern rendition of a classic cake from Venezuela, a layered treat of chocolate cream and biscuits. At Samba, they put a sleek spin into it, elegantly packaged with all the little details that make it a little more special. A delicate 'balloon' made out of dark chocolate encases everything: there's 70% Peruvian chocolate, chili for a little tickle on the palate, almond flakes, a dollop of passion fruit sorbet for a fruity tang, and extra virgin olive oil 'snow' — EVOO transformed into tiny crumbly flecks that melt in your mouth.

Each component may seem strange, but all the elements suprisingly mesh well when you have a little of everything in one bite, a complex mix of textures and flavors frolicking in your mouth. Definitey unusual, and something chocolate lovers ought to try!
