Leave it to French Chef Cyrille Soenen of Impressions and Brasserie CiÇou fame to create mouthwatering reinventions of Kouign-amann that finally put the traditional French pastry on spotlight.
My first introduction of this French cake is through Filipino-French foodie, gourmand, and restaurateur Erwan Heussaff. In an interview, he describes the Kouign-amann as stuff of fat kid buttery dreams come to life. "My dad's from this part of France where they do this butter cake which is literally---picture taking fifteen, twenty croissants and stacking them until they're this thin," he shares, "In between each layer you put butter, and then you caramelize sugar in between and you just eat the whole thing. It's just magnificent."
It was too delicious of a description by him that I soon after found myself seated inside Brasserie CiÇou, eager for the waiter to serve me my very first Kouign-amann, their signature dessert and cult favorite of dessertarians in Manila. And true enough it did not disappoint: I sink my teeth into the golden pastry, taking a good bite, and immediately the butter bursts into my mouth. So much fatty liquid is released that the amount is bordering on the obscene, coating my tongue and rolling deep inside my throat. Then come the thin, crisp layers of the pastry, as I chew slowly (and each time I chew, more butter squishes around my mouth). Definitely something to indulge on for the holidays (when we aren't counting calories)--a buttery, glorious reward for the year that was.
