Spiral Artisans and Celebrity Chefs in Culinary Showcase to Honor Mothers and Fathers

For this upcoming Mother’s Day and Father’s Day celebration, Sofitel Philippine Plaza Manila Master Chefs team up with celebrity chefs to honor mom and day for the months of May and June, respectively.

For this upcoming Mother’s Day and Father’s Day celebration, Sofitel Philippine Plaza Manila Master Chefs team up with celebrity chefs to honor mom and day for the months of May and June, respectively. Six featured chefs of families from rich culinary traditions share heirloom recipes.

Sofitel Pays Homage to Moms

The light of every home will be treated to secret recipes tried and tested through generations of culinary families enhanced by that Spiral touch of magic. Featuring dishes borne by generations of refinement and evolving culinary trends, Chefs Nina Daza Puyat, Mia Manuel, Suzette Montinola and Judy Ann Santos presents a tradition of taste this Mother’s Day.

Chef Mia Manuel’s delectable recipes are inspired by family vacations spent in France and dishes passed on by her mother, Dr. Maria Lim – Ayuyao, the youngest daughter of World War II hero, General Vicente Lim. For Mother’s Day, Chef Mia Manuel shares dishes that tickle the palate with Stewed Lamb Leg with Dried Mangoes, Gravlax and Cream Cheesecake and Brune Butter Cupcake with Lemon Cream Icing. For Chef Suzette, her grandmother Doña Ramona “Tita Moning” Hernandez-Legarda influenced her passion for cooking which comes with a heavy Spanish influence. Among these age-old dishes that she will be sharing for our Mother’ Day selection are Whole-Baked Lapu-Lapu, Bread and Butter Pudding, and Tita Moning’s Beef Osso Buco Gremalota. The Daza family has been a household name in the culinary world with heavy influences from Nina Daza-Puyat’s mother, Nora Daza whose legacy helped shape Filipino cuisine. Her personal travels adds flavor to her rich selection of recipes. Her French Onion Tartelettes, Portobello Mushroom Fries and Chicken Relleno with Griblet Gravy are among the featured fare for this special weekend. And staying true to Filipino roots, Judy Ann Santos highlights Filipino comfort food that her children enjoy with her own flavorful rendition of Chicken Binakol, Beef Kaldereta and Ginataang Mais.

Treating dads and their family to signature dishes that have influenced the gastronomic landscape, our featured chefs take from their heirloom recipes and specials borne from their travels. Chef Ariel Manuel’s annual trips to culinary treasure troves France, Italy and Spain have inspired his selection featuring Roasted Quail with Maple, Beef Salpicao with Mustard and Stewed Lamb Leg with Dried Mangoes. Chef Sandy Daza’s overseas culinary immersion in France’s Le Cordon Bleu, American College in Paris, Cornell University in Ithaca USA and Mandarin Cooking School in Bangkok Thailand has added colorful layers of flavor in his creations. Now hosting a television show entitled Foot Prints with Sandy Daza, he takes us with him in his epicurean voyage. For Father’s Day, Chef Sandy Daza shares his very own rendition of Crispy Chicken in Hoisin Sauce, Beef Burgundy and Spicy Chicken in Coconut Milk.
