SM Supermalls Welcomes Madrid Fusión Manila with Cuisine Demos by Top Filipino Chefs

In celebration of the upcoming Madrid Fusión Manila happening April 24 to 26 at the SMX Convention Center, our very own Philippine chefs and representatives to Madrid Fusión Manila held a cuisine demonstration at Sarsa Kitchen + Bar Mall of Asia. Here's what they prepared, and here's how you foodies can celebrate our rich Filipino-Spanish culinary heritage in SM Supermalls this weekend.

In celebration of the upcoming Madrid Fusión Manila happening  April 24 to 26 at the SMX Convention Center, our very own Philippine chefs and representatives to Madrid Fusión Manila held a cuisine demonstration at Sarsa Kitchen + Bar Mall of Asia. Madrid Fusión Manila is the prestigious epicurean congress much-awaited by chefs, restaurateurs, and by the rest of the food and dining scene. It's a 'big foodie deal' as it is the first time that Spain's most important international gastronomic event on progressive haute cuisine will be held outside Madrid. Imagine Spain's top culinary minds — distinguished Michelin-starred chefs, no less — meeting with our local participants, exchanging ideas and inspiration to further deepen each others' passion for cooking and feeding only the best. It's the rockstar food event right at our own shores.

April puts the most delicious of food front and center, and some of our very best culinary talents will represent the Philippines at Madrid Fusión Manila. At the SM Madrid Fusión Manila media launch, four of our own top chefs showcased their mastery in cooking at the demo, including Sarsa Kitchen + Bar's Chef JP Anglo.

Presenting our country's diverse and imaginative epicurean traditions at the congress are chefs Fernando Aracama, Margarita Forés, J Gamboa, José Luis 'Chele' Gonzalez, Pepe Lopez, Rob Pengson, Bruce Ricketts, Myrna Dizon, Claude Tayag, and Juan Carlos de Terry. At last week's demo, Chef Bruce Ricketts, Chef Rob Pengson, Chef Claude Tayag shared proudly Filipino dishes.

Chef Bruce Ricketts (Mecha Uma) is one of the metro's youngest culinary talents, possessing skills that prove age has nothing to do with success. The chef explains how his Filipino roots are different, having been based abroad and only getting to taste some local food recently (dinuguan and suman, to name a few). He prepared at the launch his Seared Prawns with Marinated Saba, Avocado and Burnt Coconut Vinegar, which also had shrimp roe sauce and sweet potato.

Chef Rob Pengson (The Goose Station) presented our mixed culture of Filipino, Spanish, and Chinese in his Mango Tapioca Surprise using local ingredients. He showcases his personal stamp of Filipiniana cuisine in the dessert: a plate of mango silken tofu, condensed milk, manchego cheese coulis, tapioca, puffed red rice, and crispy eggrolls.

The self-taught Chef Claude Tayag (Bale Dutung) is widely known to present an elevated version of Capampangan cuisine in his house that is also a by-reservation-only restaurant. He gave a few tips on cooking the Filipino favorite, adobo, a dish that he will present and discuss further at Madrid Fusión Manila. He presented two kinds of adobo at the cuisine demonstration: Adobo ni Juan Tamad and Adobong Puti.

2. SM Spanish Food Specials (April 24 to 26 at SM Megamall, SM Mall of Asia restaurants)

New food concepts that reflect culinary innovation and technique will be available only this April at select SM Mall of Asia restaurants where special dishes with Spanish influence or cooked with the finest local produce, ingredients and flavors. On April 24 to 26, dining deals await food lovers at SM Megamall’s flagship and first-in-the-country dining destinations and the newly-opened Mega Food Hall.

  • Cebu Specialty Dining Offers (April 6-30): Cebuano specialty cuisine at participating restaurants
  • Cebu Flavors with Chef Raki Urbina (April 25, The Northwing Atrium): Explore the rich flavors of Cebu througha culinary demonstration featuring the Cebuano cuisine

4. SM Lanang Premier, Davao (Davao Pomelo Festival)

  • Pomelo Market (April 10-May 17, Fountain Court Grounds): a special feast and selling exhibit that puts Davao's most popular harvest on the spotlight
  • Pomelo Dishes & Drinks Chef Demo (April 25-26, Fountain Court Grounds): Head chefs of SM Lanang Premier restaurants and different culinary schools of Davao City will showcase pomelo dishes and drinks in a special gustatory demonstration
  • Eat All You Can Pomelo (April 18 to May 17, 2nd Level, Fountain Grounds): Eat-all-you-can pomelo fest every Saturday and Sunday from April 18 to May 17
