This surf and turf feast features dishes using staple ingredients central to the islands and cooking styles that result in rich and creative entrees. It captures the richness of land and the freshness of the sea. Partake of these new offerings from now until November 30, 2011.
The launch of the restaurant’s new dishes is part of Fish and Co.’s ongoing campaign of adding a variety of choices in its menu, a successful strategy that has reeled in both seafood and meat lovers. “Fish & Co is widely popular for its Fish & Chips and other seafood fare; but we have much more than these. We have expanded our offerings to include more meat dishes. Our Fish & Ribs selection which we launched early this year was very well-accepted by our guests. And so it inspired us to come up with “Plates of the Caribbean” which showcases the bounty of the land and the sea — there are fish and seafood, chicken, pork, beef and vegetables. It’s a great combination that our guests will surely enjoy” says Riz Imperial, Operations Director.
Dock Into These Island Destinations
The soul of Caribbean cooking lies in the use of the freshest ingredients enhanced with herbs and exotic spices for that extra layer of flavor. A fusion of cultural influences and cooking techniques, the region’s cuisine is a collection of distinct specialties.
Five island destinations inspire Plates of the Caribbean and Fish and Co. captures their delightful flavors.
First stop is Dominica, a dish that combines the subtle taste of chicken and the smoky flavor of bacon. Chicken fillets are marinated in olive oil and fresh herbs, grilled and then served with shrimp pancakes and seafood rice.
For foodies who want to have the best of both worlds, there’s Barbados — hefty bites of meat and seafood in one plate! Perfectly grilled pork tenderloin marinated in spices is paired with succulent grilled prawns, then served with fresh vegetable wraps and salted fish fried rice on the side.
Bahamas is known for using tropical fruits in their dishes and Fish and Co. interprets this with pork tenderloin with grilled pineapple done Luau style, grilled fresh squid and island fried rice.
Meat lovers, meanwhile, are in for a treat with Saint Lucia, a plateful of juicy pork belly ribs grilled just the way you like it – oozing with that wonderful, smoky flavor. It comes with crispy egg rolls wrapped in screw pine leaf and fried rice.
One must not leave the restaurant without trying Montserrat, an entrée for serious meat lovers. Indulge in well-seasoned, stir-fried beef tenderloin served with vegetables with shrimp tornado and garlic fried rice.
To Share and Just For Me Servings
“Plates of the Caribbean” are available in regular portions good for 2-3 persons starting at P450. If you’re dining alone or you prefer a smaller piece, ask the server for a “Just For Me” serving.
Refreshing New Beverages
Ten new beverages made from freshly-squeezed fruits and vegetables were also introduced to complement these Caribbean dishes. These include The Cool Cucumber Breeze — a combination of the freshest pineapple, cucumber and orange, and Raspberry Sunrise, a unique fusion of oranges, raspberries and apples.
