Samba at Shangri-La at the Fort Manila features its express multi-course dining experience by Chef Carlo Huerta Echegaray. Designed for weekday lunches in the city, the menu highlights an array of Latin flavors from appetizer to dessert that diners may choose from to customize a two or three-course meal.
Rooting from flavors and ingredients that reminds Chef Carlo of home, the menu presents a variety of fresh catch and prime cuts complemented by a party of succulent Peruvian zest. A round-up of one of the menus starts with a playful twist on the favorite Peruvian appetizer, Ceviche De Norteno—choice seafood of the day marinated in Leche de Tigre with red onions, corn and glazed sweet potatoes, followed by a filling main of Mero a La Chiclayana highlighting char-grilled red grouper fillet topped with cilantro, aji Amarillo, chichi de jora, aji panca with paprika sauce and Camote fries.
A luscious finale inspired by the region’s natural landscape offers a refreshing play of sweetness. The Rain Forest is set to complete the experience with decadent Peruvian chocolate mousse, berries sorbet, chocolate logs and flower dust.
