Makati Shangri-La, Manila brings modern Australian dishes to Manila from September 26 to October 2 with guest chef Matthew McCool from Shangri-La Hotel, Sydney.

Chef McCool is set to delight diners with a food festival dubbed An Australian Sojourn, a week-long feature of a delectable buffet spread that highlights modern Australian dishes and the flavors of Pacific Rim cuisine. This type of cuisine is said to be a fusion of East meets West – a combination of Asian culinary styles with the cooking techniques of the Pacific Islands and the Western coast. Said to originate in Hawaii in the 1970s when fusion cuisine was all the rage in the culinary world, Pacific Rim cuisine is still popular in the regions of Australia and New Zealand. Also known as an “ingredients-driven” cuisine, the idea is to highlight the main ingredients of a certain dish as the focus.

Chef McCool introduces Pacific Rim cuisine in an extensive buffet spread at Circles Event Café using quality ingredients in dishes such as Preserved Lemon Quinoa with Roasted Capsicums, Roasted Rosemary Lamb Fillets with Mustard and Lemon and more. Diners may also indulge in Australian desserts including Finger Lime Pavlova Shooters, Lemon and Lime Tart with Macadamia Gelato and Lamington cake.

For those who prefer a more intimate experience, guests may opt for a wine-pairing dinner at Sage Bespoke Grill on October 1, with a curated menu that includes Sydney Rock Oyster, Blue Swimmer Crab, Charred Swordfish, paired with premier Australian wines. Reservations are recommended as seats are limited.

Chef McCool brings over 12 years of culinary experience to Manila, having worked with some of the world’s renowned chefs and Michelin-starred restaurants. He received numerous accolades that include being named “Chef of the Year” in 2011 and “Restaurant of the Year” by City Weekend Beijing while he was working at China World Hotel, Beijing. Chef McCool’s style of modern Australian cuisine is characterized by distinct European influences. “I am excited to share my innovative dishes and bring in Australia’s premium ingredients to tantalize the palate of Filipinos”, says Chef McCool.

An Australian Sojourn’s lunch buffet on September 28 is priced at Php 2,149 net while dinner buffet from September 26 to October 2 is priced at Php 2,395 net and includes iced tea buffet.
