When it comes to colorful treats, Sebastian’s Ice Cream usually delivers with their Pride Pop: a fruity 6-layered paleta in all the colors of the LGBT pride flag. This year, Sebastian’s takes it to the next level by adding another colorful addition to their menu: the Rainbow Grilled Cheese! Initially launched in Pride March last June 30, this delightful treat is now available for everyone else in Sebastian’s flagship store in Ayala Malls Vertis North, Quezon City.
Inspired by the Cheese Toast from Taiwan, this gooey treat is the product of hours of research and 10 kilos of cooked, stretched, and pulled cheeses. The filling of the sandwich is a gooey medley of different types of mozzarella that help it achieve maximum stretchiness. Every sandwich is made in-house and served fresh. This crisp and buttery sandwich may look unassuming at first glance, but don’t be fooled! Slowly stretch it out and watch a vividly-colored mozzarella rainbow unfold!

Vertis North even has a Stretch-O-Meter installed so people can put their grilled cheese’s stretchiness to the test! Sebastian’s invites you to put their Rainbow Grilled Cheese’s flexibility to the test before you dive in and treat yourself to this warm, cheesy, rainbow-colored treat.
This grilled cheese sandwich was an instant hit in its initial release on Pride March, and it’s easy to see why. The mozzarella filling is a perfect blend of flavor and flexibility, complemented by its warm, crisp, buttery toasted bread. A sandwich costs P150, and you can get a glass of their new Cold Brew Ice Tea if you add P25. This bright and colorful food item is only a preview of Sebastian’s revamped menu and will be made available on all their branches sometime in August or September.
