Gochu-gang at The Grid puts a satisfying and spicy spin to the trendy sushi bake!

Just when you think you’ve tried all kinds of sushi bake in Manila, The Grid‘s Korean comfort food stall puts a spicy spin on this trendy dish!

Babu at The Grid created a Laksa Sushi Bake, while Gochu-gang‘s new rice offering takes inspiration from two classic Korean dishes. The Korean Bakes have a kimchi rice base that is satisfyingly spicy, and there are two variants to choose from: Army Style and Beef Bulgogi.

Kimchi Rice Bake: Korean Faves with a Fun Twist

The first is a sushi bake version of the budae jigae, the flavorful spicy Army Stew that is loaded with bacon, Spam, sausage, and egg. The surplus of processed meats and the scarcity of beef is how this dish came about post-Korean war. Instead of a stew, the Army Style Bake replaces its spicy broth with spicy kimchi rice. In addition to the meats, it’s topped with Japanese mayo, cheese, and ssamjang.

The Beef Bulgogi Korean Bake is pretty straightforward. The kimchi rice is topped with grilled beef bulgogi, shiitake mushrooms, and onions. It also has the familiar flavors of its sweet and savory soy garlic sauce drizzled on top. Finally, making it extra luscious is Japanese mayo and cheese. Every mouthful of this wrapped in the nori sheet is a guaranteed flavor bomb!
