Manila Inasal is a new food concept from Chef Natalia Moran (of Boracay’s Sunny Side Cafe and Spicebird). Natalia has been making chicken inasal for a Roxas City restaurant and during this pandemic, has decided to turn the classic Ilonggo dish into a family affair. Joining in this new food biz is her brother Enrique who manages its online storefront, and her sister Bella in charge of social media and online orders.

The chef serves up different delicious inasal creations by the box, so you’re not just limited to chicken. Their salu salo meals can feed 3 to 5 persons, and is available in different proteins. If you want something different, try the inasal pork belly slabs, tuna belly, and bangus!
Every Inasal Salu-Salo box comes with their original inasal sauce. It’s incredibly addicting so I suggest you order extra servings of this. The box also comes with a serving of green chili sauce and ensaladang talong.
You have an option to order Garlic Rice (P150) to go with your box of inasal, so please do. Their rice is also laced with that inasal oil for added flavor, excellent to pair with protein.
The chicken inasal, served butterflied (or spatchcock style), is tender and juicy, begging for extra spoonfuls of rice doused generously with the inasal sauce. Remember earlier my tip to order extra sauce? Don’t forget it.
What was a great surprise is the Pork Belly Slabs (P875) box, the unctuous meat rich with smokey inasal flavors! Who knew I’d come to love a pork inasal more than the classic chicken, a personal childhood favorite?
