Manila Marriott Hotel's Man Ho Unveils New Dishes

Marriott Hotel Manila takes Cantonese cuisine to a whole new different level with Man Ho's new dishes. A 136-seater restaurant, everything is expertly prepared by their culinary team headed by their new Executive Chef from Hong Kong, Chef Chi Fai, who has over 30 years of Chinese Cuisine Experience.

From a Roasted Flambéed Peking Duck to a Double-Boiled Abalone Soup, the restaurant features dishes that are a feast to the senses. Starting off with the appetizers, Man Ho shares that jellyfish have always been a side dish in Chinese meals. At Man Ho, Executive Chef Chan Chi Fai decided that it should be highlighted, that's why he created the Shredded Chicken and Jellyfish (P980/small; P1,600/large). It has all the elements to a great appetizer – savory and crispy. There's also the highly addicting Wok Fried French Beans with Salted Egg Yolk (P380), crispy fried french beans covered in salted egg yolk. We couldn't stop munching on these!

Wok Fried French Beans with Salted Egg Yolk

Packing a bit of heat is the Wok Fried Pork Parcels (P360) served with Szechuan chilis for dipping. They put together ground pork leg with minced red cabbage, spring onion and ginger in a siomai wrapper and deep fry it until it becomes golden and crispy. There's also the Stir Fried Shrimps and Porcini Mushrooms and Broccoli (P1,280) which has plump shrimp, minced porcini mushrooms and crunchy broccoli that's just been sauteed in garlic and onion with oil.

Overwhelmed with all the great flavors? A perfect palate cleanser and a healthy one, at that, is the Double-boiled Abalone with Red Dates and Coconut Broth (P680).

Double-boiled Abalone 

The real highlight of the spread is the Roasted Flambéed Peking Duck served with Chinese Pancake (P3,288) that can be cooked two ways. Roasted for forty-five minutes, the duck is served and flambéed in front of guests by pouring Dalmore 12-year-old Whisky to add more flavor. After a good minute, they slice the skin off the duck and serve with Japanese cucumber, onion leeks and Hoisin sauce wrapped in a thin pancake. After they've wrapped it in pancake, they bring the duck back in the kitchen and fry it with just salt and pepper.

Moving on the meatier mains, the Pan Fried U.S. Beef Tenderloin in Black Pepper Sauce (P1,500) and Slow Braised Australian Beef Shank in Palawan Honey (P480) are so tender, you wouldn't need a knife to cut through it.

At this point, sipping on a warm cup of tea would be perfect but what's a meal without dessert to end a great Chinese spread? The Sticky Glutinous Rice with Coconut (P198/3pcs) is similar to a Japanese dessert because of the mochi-like texture but the custard filling hits right at home and would remind you of that steamed custard bun.
