Sebastian’s Ice Cream ends 2021 with a bang! For the Holidays, one of our favorite ice cream shops in Manila has released their limited Christmas collection.

Puto Bumbong makes a comeback this year which is actually Sebastian’s first kakanin ice cream. Its ice cream base is made with glutinous rice infused with muscovado sugar and margarine, topped with more muscovado and grated fresh coconut.
A personal favorite and what surprised me the most is the Cathedral Window. I wasn’t expecting much when I read the description but a spoonful turned into more spoonfuls until I was left with an empty cup. It has a milk ice cream base which actually tastes like the base of the dessert they’ve drawn inspiration from, and comes with bits of cherry, red grape, green grape, pineapple, and orange jelly cubes.
Lastly, they’re newest flavor — Eggnog which is inspired by the western Holiday drink. It is a custard-style ice cream made with yolks and cream, and infused with brandy and nutmeg. It may be cold since it’s in an ice cream form, but it truly feels like a hug from within because of the brandy and spices.
