Uncle Cheffy Brick-Oven BBQ is another mouthwatering addition to the Chef's Quarter family, which also includes Kuse and Old Vine Grille. The restaurant incorporates the feel of home cooking into their dishes by preparing them in the traditional slow-cooking process. Their menu is quite extensive: they have grilled meat and seafood, soup and salad, Spanish and Filipino specialties -- if you've got either a picky eater or an adventurous gourmand in your group (or both), Uncle Cheffy is your bet to keep everyone's cravings satisfied.

While Uncle Cheffy prepares their dishes in the traditional, slow-cooked method, it doesn't mean service is unbelievably slow -- just don't expect it to be fast-food quick. Simply sit back and enjoy the company and the warm ambiance and in no time the food will arrive on your table.

Grilled Prawns and Pomelo Salad

We start off our lunch with Grilled Prawns and Pomelo Salad (P220/P395), which had a tangy roasted sesame vinaigrette. The tartness of the juicy pomelo strips complimented the crisp greens and pieces of shrimp. We chose to share the salad so that it'll be light on our tummies, since we're in for more savory dishes.

Since we were in a restaurant specializing in brick-oven cuisine, we decided to order some items that highlight this cooking process. The panizzas are best-sellers in Uncle Cheffy, perhaps because its baking process makes the crust perfectly crisp and evenly heated.

East Meets West

If you haven't tried panizza yet, then Uncle Cheffy's brick oven panizza will turn you into a panizza enthusiast. Their version of the thin crust, rolled-up pizza is baked on charcoal brick oven that gives it a distinct crispness.

I tried the East Meets West (P495), a rectangular three cheese panizza topped with parma ham, salami, kesong puti, salted eggs, tomatoes and mango. In this pizza roll, the flavors of both east and west meet seamlessly, and given a fresh twist with the alfalfa and arugula. I prefer my panizza with a little drizzling of hot sauce, to heat things up a bit.

Memphis Barbecue U.S. Beef Rib Finger

Meat lovers might want to try the Memphis Barbecue U.S. Beef Rib Finger (P595 for 1,000 grams). The platter of meat comes with side salad, marble potatoes and three sauces: chimichurri, memphis barbecue sauce, and tomato salsa. As the beef comes already marinated with the memphis barbecue sauce, I found it better to pair the meat with the chimichurri for that tangy tex-mex kick.

The Spatchcocked Half Chicken (P295) served as a good example of slow cooking -- juicy and succulent meat, tender when sliced. It was served and marinated with walnut-dill pesto, and had a siding of potato salad. This is also best eaten with white rice, and shared at that.

Spatchcocked Half Chicken

Unfamiliar with the term 'spatchcocked', I researched on it and found out that it's a term for 'butterflying' a bird by removing its backbone to flatten it out, making for a more even and faster cooking.

Chilled Peppermint Cheese Cake

After all the meaty and flavorful eats for lunch, my pick for a dessert was a slice of Chilled Peppermint Cheese Cake (P120) to cleanse the palate. I dubbed it as a cheesecake version of After Eights. It's very minty and moist, an after-meal dessert choice for those wanting to rid of the salty, meaty aftertaste of flavorful meals.

Restaurants like Uncle Cheffy are easy picks for big groups of families and friends wanting to have a memorable shared meal. From traditional and classic grilled entrees to newer favorites like the panizza, tummy pleaser dishes await hungry customers. Brick-oven cuisine sure brings out the savory in global flavor at Uncle Cheffy.
