Chicken…served with chocolate?!
It might sound bizarre, but it's definitely delicious, and ready for your taking at Agos restaurant.
This Filipino restaurant with Chef Myke 'Tatung' Sarthou at the helm is located at the North Wing of SM Mall of Asia, and it puts the spotlight on our culinary heritage focusing on the Manila-Acapulco galleon trade — think cultural exchange among Spanish, Mexican, Filipino, and also beyond. Chef Sarthou uses this as inspiration for his dishes, then reimagines them.
One of his signature dishes at Agos is this chicken braised in dark chocolate sauce (tablea) — while it seems far off from our Filipino staples in every household, this dish is actually a rediscovered recipe from way, way back. For those very familiar with Mexican food, this chicken dish will be a little familiar because it reminds one of the chicken mole that's embraced with a sauce loaded with lots of spice and hints of chocolate to give the chicken extra oomph.
Pollo con Salsa Tsokolate in Agos is smothered in a dark chocolate sauce, savory with just enough hints of sweetness. It comes with baby potatoes and string beans, but it's so flavorful and notoriously Pinoy because each bite of this saucy chicken will make you crave for spoonfuls of rice. It's definitely a dish from a restaurant that will both educate and entertain you–there's more to Filipino food than we think and there are still many more delicious dishes to discover.
