We know it's hard to top your lola's and your favorite tita's home-cooked adobo, but Chef JP Anglo's new dish at Sarsá Kitchen + Bar may just let you reconsider your favorites.
The chef who champions Filipino and Negrense food recently celebrated his birthday, and shares that he has been traveling all over the country to eat, surf, and work on his show for CNN Philippines. 'There's still so much to learn about our cuisine,' JP says, and adds that exploring our country's different regions and tasting different native dishes has inspired him to come up with nine new dishes for Sarsa–and a delcious adobo dish is one of them.
Any proper Filipino restaurant would serve a proper adobo dish — after all it's considered by most as the national dish. And this new Liempo Pork Adobo at Sarsa does a mighty fine job comforting the stomach (with extra help from rice, of course). This new creation by the Ilonggo chef is a platter of adobo served two ways– it's braised adobo pork belly accompanied by chicken adobo flakes. The dish also comes with eggs 2 ways: one soft boiled, the other wok-fried until crisp.
It's a fun and texture-filled version of the Pinoy classic we all love, and having little of every component in one big spoonful gives you crunchy with fatty, sweet playing with sour. It's a sin to devour this adobo without a heaping of rice–it just begs for fluffy morsels of carbs to pair the richness with.
