From Milan to Manila: FOO'D by Michelin Star Chef David Oldani opens in Shangri-La The Fort, BGC

From half way across the globe, Michelin Star Chef Davide Oldani brings his culinary expertise and impressive palate to the metro with his concept restaurant, FOO'D /fú-dō/ by Chef Davide Oldani. Located in Shangri-La The Fort, Foo'd brings the same exciting dishes, flavors and aromas that have made Chef Davide Oldani a renowned name in the culinary world.

Brought in by the brilliant people that introduced Food Hall by Todd English, Pound by Todd English, Hook by Todd English, Tim Ho Wan, MESA Filipino Moderne and Sunnies CafeFoodee Global Concepts aims to educate the Filipino palate and elevate the dining experience to a new exciting level by making luxury gastronomy affordable. But how affordable is it, really? At Foo'd, a three-course meal starts at P800 and a four-course meal starts at P1,200.

Start off with Chef Davide Oldani's signature dish, the Cipolla Caramellata, which has caramelized onion and crust, topped with a tart 24-month-aged Grana Padano gelato drizzled with some more Grana Padano hot cream. It's sweet, hot, cold and has the right amount of saltiness to it. Every element on the plate wouldn't make you go wow but when consumed altogether, will give you a different kind of experience. That's what's great about Cucina Pop... it weaves together different flavors and when put together, creates a surprising dish.

For the second course, a plate of pan-seared free-range spring Chicken and Prawn with spicy raisins leaves off a smoky aftertaste because of the veal jus it sits on. Served with thin slices of vegetables, the fork tender Iberico Pork Ribs is sous vide served with porcini mushroom sauce and liquorice topped with muscovado crumbs which further enhances the flavor and adds texture to the meat. The sauce of both dishes makes you wish you have bread to wipe it off clean or better yet, a warm cup of rice to pair it with.

For dessert, we got to try the Lemon Curd which is Chef Davide Oldani's famous masterpiece – it has dehydrated meringue perfectly placed on top of the lemon curd, a bitter and refreshing lettuce gelato sitting on top of a mixture of cacao crumble and curry almonds. Make sure you scoop every element together for the ultimate experience! If you want something rich and classic, order the Dark Chocolate Mousse. It has dried framboise (french for raspberry), dark chocolate gelato on top of the mousse sitting on a bed of cacao crumble and a pinch of Maldon salt to balance out the sweetness.
