There are many, many avid fans of this cured pork goodness all around the world, and slices of this meat are often found in breakfast dishes and as an accessory to thick and juicy burgers. Often prepared cured using salt or brine, bacon can come from different parts of the pork (like its belly, back, or side) and can be cooked in many ways (smoked, grilled, deep-fried, etc.). It seems like the bacon mania is here to stay, whether you're part of the bacon persuasion preferring it sliced very thinly ('rasher') and fried to a thundering crisp, or eating it as a thick and meaty slab.

What to Order: Dulcelin's Ricky Morelos is known to be a master of meats, so you must try his version of the bacon. Get the Apple and Hickory Smoked Homemade Slab Bacon (P285).
