Sky’s the Limit at Katsu Sora

This a homegrown Filipino katsu brand showcases four kinds of high quality pork to its customers.

The word “Sora” is the Japanese term for sky. In name alone, Katsu Sora is already set on creating a premium quality dining experience that will take its customers to new heights. Much value is also given to presenting a variety of options, as availing of any set option would give one access to an all-you-can-eat rice, soup and salad bar, ensuring that each visit to Katsu Sora can bring something new to the dining table.

Katsu Sora presents four options of world-class, high quality pork to its customers. These vary in terms of price, flavour and texture, but all are naturally tender and tasty without the use of chemical tenderisers. The Sakura Pork, which hails from Canada, is a flavourful and tender variant well-suited for customers who would like to keep their meat on the leaner side. The Shimofuri Pork, a product of Spain, is more on the marbled, moist side. The Kurobota Pork, which most katsu lovers are highly familiar with, is a highly prized heritage meat from Japan. Katsu Sora is the first ever katsu place in the Philippines to introduce the Spanish Iberico Pork, the height of the premium pork experience. This expensive and highly sought-after pork is so rich and juicy that it practically melts in your mouth. Aside from their pork, they are also proud of their breading (panko), which is pleasantly less oily than most.

To start, we were asked to sample the Iberico Pork Tonkatsu Set (P655), the unquestionable star of the show. It was my very first time to try Iberico pork, so it was good to find out for myself that it really is worth shelling out some cash for. As promised by its description, it is highly marbled, very soft and richly flavoured. This particular set also comes with the Juugokokumai Rice, a premium, healthy 15-grain rice blend of white rice, corn, barley, millet, sesame seed and black bean.

Iberico Pork with special rice

We were also able to try the Sakura Katsudon Set (P350), another one of their specialties. There is nothing quite like biting into succulent pork mixed with egg and the special katsu set. It adds a bit of sweetness to this much-loved comfort food dish. I also give it plus points for presentation – it comes in this decorative pot that also serves its purpose by kindling the katsu over a small flame, keeping it warm throughout the course of our meal.

The Tonkatsu Curry Set (P365) allowed us to sample the katsu in yet another different way. As a big Japanese curry fan, I am always eager to try this dish whenever I see it on a restaurant menu. Katsu Sora’s curry, with its rich, mildly spicy sauce, certainly does not disappoint.

The Chicken with Cheese and Ohba Katsu Set (P350) adds a bit of filling to the katsu experience. I quite liked this as it was stuffed with chicken, cheese and Japanese basil, which takes away some of the monotony by adding a different kind of flavour and texture to the katsu. To round out the sampling, we had the Mix Katsu Set (P450), which includes a Tiger prawn and slices of salmon katsu alongside the Sakura pork.

For dessert, we had the Yomogi Shiraama Azuki Mix Ice (P200). This sweet dish is a refreshing mix of two flavours of ice cream (vanilla and matcha), red bean and glutinous rice. We washed it all down with the equally refreshing Calamansi Sprite (P70), a drink that puts a twist on the typical softdrink option.

Katsu Sora’s interiors are done in shades of warm browns and bold reds. One particular element that caught my eye was the red-and-black temple wall art framed by narrow strips of wood in an almost shoji screen-inspired way, which contributes to the authenticity of the experience.

 
 

One pleasant fact about Katsu Sora is that it is a homegrown Filipino brand. The owners, who are big fans of authentic Japanese katsu, brought over a Japanese chef consultant to help them conceptualise and create the menu that their Filipino customers now enjoy.  Authenticity needn’t be limited to carrying over franchises from other countries. With the right concept and the right consultancies, we are more than able to give our fellow Filipinos a premium, authentic dining experience under  brand that is proudly Filipino.
