Want to travel to Japan during your lunch hour or for dinner? Then the best way to do it and be back in time for work is to just hop on by the new Moshi Koshi Noodle Boss restaurant at Market! Market! in Taguig City.
Moshi Koshi Noodle Boss
Moshi Koshi Noodle Boss is one of the newest additions to the local restaurant scene and just like its name implies, they sell noodles like no one else does. The term “Koshi” as explained by one of the owners, means “that sweet state of a noodle that is tender and chewy, firm but not hard, with resistance to the bite.” Combine that with “Moshi”, meaning hello in Japanese, you basically have “Hello, great tasting noodle!” And I tell you, the noodles do not disappoint.
The noodles are made daily in the restaurant in order to keep them Koshi, or more than once a day depending on the demand. This guarantees that when you receive your noodles, they are fresh and chewy. If you are lucky enough, you can actually see them creating the noodles right there in the store. This area of the restaurant is easily located by its telltale window and three lights somewhere on top. It is also strategically located near the kitchen and you can’t miss it. You will know when they are making the noodles because the three little lights on top of the sealed room will light up. The lights in fact represent the three different noodles being made: orange for the Ramen, brown for the Soba, and green for the Udon.
The main dish at Moshi Koshi is of course noodles. You have the choice between Ramen, Soba, and Udon. Each can be served with three different broths having its own distinct flavor:
- Shoyu, a soy-sauce based soup popular in Tokyo
- Miso, a rich and hearty broth made with fermented soybeans
- Shio, a salt-based clear broth
But for those who really want their rice for the day can also have it here. The restaurant serves some great rice dishes made the Japanese way, such as the famous Gyudon, Oyakodon, and Katsudon.
This being a noodle place I of course had to try the noodles. The first dish on the menu for me was the Miso Ramen (P230). This dish consists of Chinese style wheat noodles made the Japanese way, all in a very flavorful Miso broth. It is suggested that you eat this dish within 7 minutes of being served so that you can get the best tasting experience. Again, this is only a suggestion since the soup is hot! The combination of the firm and tasty noodle, hot broth, and tasty slices of meat makes this a must try.
The next delicious dish laid out before me was the Tempura Soba (P170). This noodle soup is made out of thin buckwheat noodles in a hot Shoyu broth. And like the first dish I tried this one had to be eaten within a certain period of time to enjoy the most intense Koshi experience. This dish is suggested to be eaten within 5 minutes. As per the owner, slurping is permitted and even greatly encouraged!
One of my favorite items on the menu, besides the Niku Udon (which will be highlighted a bit later), is the Kara-Age (P50 per piece). This is a lightly breaded tender chicken cutlet, deep fried, and comes with a slight ginger taste. Imagine a succulent, moist, piece of chicken that you can bite into and stays tasty from the first bite to the last. This is best paired with one of the noodle dishes.
As I briefly mentioned earlier this next dish was one of my favorites. The Niku Udon (P170) is made out of thick wheat flour noodles, topped with thinly sliced beef strips and topped off with slices of fresh spring onions. The broth is soy based and is the perfect combination for this dish. I enjoyed this particularly because of the thick noodles combined with the thin beef slices made this a satisfying meal. Add the Kara-Age to this dish and you’re set.
I’m a bit fond of curry dishes so the rice dish that I tried was the Curry Katsu (P275). This consists of Japanese rice with a piece of lightly breaded Pork Chop, Potatoes, Carrots, and three different kinds Paprika’s, covered with Japanese Curry. Japanese Curry is not as strong as other types of Curry so you can taste the blend of the Curry sauce and Katsu in your mouth.
And what is a meal without some dessert right? Well, this place does desserts too. They offer two types of Ice Cream, Coffee flavor (P65) and Green Tea flavor (P65). I was very intrigued with the Coffee flavored one as the owner said “It is Coffee flavored Ice Cream that tastes just like Iced Coffee.” And you know what? It did taste just like Iced Coffee.

Like the saying goes, all good things must come to an end. But that doesn’t mean I can’t go back and visit Moshi Koshi Noodle Boss for lunch another day. For those who do not live or work near Market! Market! do not fret. There is another one on Shaw Boulevard corner Ideal Street in Mandaluyong city. They do also have plans of opening stores in Robinson’s Galleria and as of yet an unidentified SM unit. Bon Appétit!
