“Magical Malaysia,” An Asean Food Festival at Edsa Shangri-la, Manila

Edsa Shangri-La, Manila’s HEAT all-day dining, in cooperation with the Association of Southeast Asian Nations’ Ladies Foundation (ALF), recreates Malaysian and other select dishes from the ASEAN Culinary Delights cookbook in an epicurean buffet lunch and dinner adventure slated on September 2 to 14.

The hotel’s resident Executive Chinese Chef Christopher Chai, who hails from Ipoh, Malaysia, will lend his culinary expertise in interpreting some of the notable Malaysian recipes featured in the cookbook such as Beef Rendang and Hokkien Mee as well as traditional favorites Laksa, Nasi Lemak and Char Kwey Teow. Dishes from other participating ASEAN member countries will also be included in the two-week food festival including: Hainanese Chicken, Thai Fish Cake, Tinola, Coconut Prawns, and Stuffed Chicken Relleno and Tom Yam, among others.

“We are delighted to host the ASEAN Food Festival at HEAT, with a spotlight on Malaysia, as we aim to help create an appreciation for these diverse and rich flavors generously shared with us through the efforts of the ALF,” said Patrick Schaub, hotel general manager.

Edsa Shangri-La, Manila, together with its Shangri-La Hotels and Resorts in the Philippines’ sister properties, recently collaborated with the ALF to share the culinary wonders of the 10 ASEAN member countries namely: Brunei Darussalam, Cambodia, Indonesia, Laos, Malaysia, Myanmar, Philippines, Singapore, Thailand and Vietnam. The dishes will be featured in a “traveling” food festival that started in August at Makati Shangri-La, Manila, this coming September at Edsa Shangri-La, Manila, October at Shangri-La’s Mactan Resort and Spa in Cebu, and finally in November at Shangri-La’s Boracay Resort and Spa.

The ASEAN Culinary Delights cookbook, available for Php499 at HEAT during the food festival or through the ALF, is divided into five sections: Childhood Favorites, Signature Dishes, Delectable Delights, Festive Fare, and Celebrity Chefs. The last section, Celebrity Chefs, includes two recipes shared by Makati Shangri-La’s Executive Sous Chef Gene Del Prado (Sinigang na Lapu-Lapu sa Miso at Kamias) and Shangri-La’s Boracay Resort and Spa’s Executive Sous Chef Azlan Juri (Ikan Asam Pedas Dengan Nasi Lemak). All proceeds of the cookbook’s sale will be used to aide projects meant for the calamity-ravaged areas in the Visayas region.
