At the cornerstone of any great restaurant is the food. And for guests visiting the 31st floor of Fraser Place in Salcedo Village, Makati City, there’s definitely a mouthful of flavors to look forward to, as nothing less than gourmet is cooking up at the “new” Cravings.
With a culinary tradition and credibility spanning 25 years, that’s hard to boot, yet the restaurant nevertheless reinvented itself into a place “to see and be seen” -- an exciting transition that includes weekly menu specials and other novelty dining options that are just too decadent to resist by its growing base of food followers.
A Weekly ‘A-Fare’ to Remember
Cravings Fraser Place turns a new leaf so to speak, as it re-emerges from being an in-house facility for hotel guests to full-service restaurant, catering broader palates with expanded lunch choices that are, according to Hilario Gil Santiago, Senior Operations Manager of Cravings, “very cosmopolitan and full of tantalizing global favorites.”
“Apart from signature Cravings classics, we opted to give our weekly-changing menu set specials enticing twists that intrigue even the most fussy tastebuds,” says Santiago, whose extensive professional expertise includes sales, hospitality, training and management of staff.
Offering guests a satisfying mix of authentic continental cuisines that are “reinterpreted” with Filipino twists, the lunch set includes two selections of dishes and a pastry choice of the day.
What would seem to be daunting to the uninitiated is but a creative “kitchen” playground for Chef Bruce Davide, Cravings Fraser Place resident kitchen pro. Passionate about his craft, the Singapore-trained Davide is the brains behind the savory fusion, an experimental genius who pays high respects for preparation and presentation that is both traditional and authentic.
“I play with whatever ingredients available. It’s challenging, but it’s also fun. Coming up with recipe ideas and preparing a food festival every week really unleashes the artistic side of my cooking,” says Chef Bruce.
In preparing the weekly lunch features, Chef Bruce says he and OM Santiago challenge themselves to come up with the best and yummiest savories to offer. Unassuming and diligent in their quest to operate a successful restaurant, the tandem’s partnership proved a praise-worthy alliance. Since the launch of Chef Lunch Specials, lunchtimes became extremely busy. The cause of the uproar? None other than the distinctive flavors of global masterpieces, like Southeast Asian, Italian-Sicilian A-fare, Latin American and of course, Filipino fusion, to name a few.
No matter where your gastronomic journey of beginnings and mains takes you, Santiago playfully cautions everyone to make sure they save room for sweet, delectable endings -- in the form of decadent pastries, cakes and desserts.
“Of course, nothing beats the classic Cravings cakes. They are still the best,” says Santiago. As for longtime fans of Cravings’ classic fares, they need not worry, as he assures that the signature favorites and best-sellers are still included as regular menu offerings as well.
Seeking to switch the space to a more dinner-focused operation and as an endearing choice spot for city urbanites, the restaurant has also recently undergone a tasteful interior makeover. Sans the ornate fixtures that are a complete departure from most casual and fine dining joints in Makati, the refreshing change in Cravings Fraser Place is truly immaculate to behold.
Starting with a cleaner floorspace, the outlet’s main area made a great option to stick with simpler, minimalist details. Contrasting battle of textures are also evident yet tamed to a perfect minimal, creating a balance between the furniture’s rustic wooden and metallic elements. The stylish hanging lamps and liquor holders, meanwhile, seamlessly provided a charming “country-meets-contemporary” vibe.
“It’s a treat being up above the city. What made it even more fabulous is that guests have a lot to discover at Cravings Fraser,” muses Santiago.
The refinements at the Fraser outlet are indeed not surface-deep. With the combined managerial and creative talents of Santiago and Chef Davide, the results are quite evident and very enterprising, notwithstanding the fact that changes have took place just two months ago.
